Chicken Pesto Sandwiches

Have you ever seen the movie A Troll in Central Park?  If not, you’re not missing much. Except maybe some nightmares.  In the movie there is a friendly little troll, Stanley, with a green thumb.  And he has a magical talent for growing all kinds of plants and flowers with this wondrous green thumb. It’s quite impressive. Equally impressive is the evil troll queen Gnorga who has a purple thumb that turns things to stone.  She just waltzes around touching stuff with her evil purple thumb and petrifying them.  It’s truly a .. unique film.  But basically what it comes down to is I am nothing like Stanley.  I was not blessed with magical green botanic thumbs.  I sometimes wonder how a mother of two, who spends so much time nourishing souls and bodies, cannot keep a simple plant alive.  When it comes to gardening, you might as well call me Gnorga.  The only thing I’m good at when it comes to plants is killing them.  However, my wonderful neighbors invited me to their  “gardening club” a couple months ago.  Together we planted a community garden and we each take turns watering and pruning and doing all those things that people who plant things do.  Of course when I say “we” I mean our husbands.  Thanks to their lovely invitation, and the hard work of all our spouses, I have been able to enjoy some wonderful fresh fruits and vegetables from our garden and incorporate them into some delicious dishes!

One thing we have had no trouble growing has been basil.  We have so much of it! So I decided to make some homemade pesto with approximately 1/37th of all the basil we have. (P.S. If you’re my neighbor and you’re reading this – help yourself to some fresh basil out of our garden!)  And then, of course, I had to make these chicken pesto sandwiches with all that homemade pesto! They were delicious and if you make the pesto ahead of time, it turns out being a pretty quick dinner!  If you make it while you are preparing this meal and trying to watch a podcast and take pictures of each step as you go, you can count on it taking a couple of hours to have dinner on the table.  

I totally felt like a little homesteader using ingredients from my own garden to make dinner.  I’m basically one of the Kilchers.  (10 points if you know who the Kilchers are) Just don’t make me behead a chicken.  I think I would just be too attached to those obnoxious stinky birds.  For now I will just keep my distance and purchase their boneless, skinless, lifeless, breasts from the store.

    Order some cooked chopped chicken, cheese, tomato, sour cream powder, some chopped spinach to mix in with pesto or just put inside sand which. This will save you time, salmonella, dishes, money, and no leftovers to trash because the spinach or tomato went bad before you could actually use it. Then add all the benefits of using food better for you than the grocery store.

    Now I understand, and am not arguing, that foods grown in a garden are best for you or chickens in your coop. But I have a black thumb And no awesome neighbors to do the rest. ?. So Thrive is the next best thing! ??
