I love making dinner. But I hate when I procrastinate it and then I’m just stuck! And unfortunately, that happens more than I’d like to admit. It’s like …. “hey girls, should we grab McDonalds again?” … It’s real bad.

I’ve created this, ready in 30-minute recipe that brings to life all the flavors in the Smithfield® Applewood Smoked Bacon Topped Pork Loin Filet.
Bacon Pork Alfredo with Creamy Mustard Sauce
- 1 Smithfield® Applewood Smoked Bacon Topped Pork Loin Filet
- 2 Tbs Olive Oil
- 2 Tbs. Butter
- 3/4 cup Chopped Onion
- 2 Tbs. Minced Garlic
- 1 cup Chicken Broth
- 4 oz. Cream Cheese
- 2 Tbs. Dijon Mustard
- 1 Tbs. Chopped Fresh Parsley
- 16 oz. Penne Pasta
- Salt and Pepper
Cut pork loin filet into ½-inch thick slices and then into ¼-inch wide strips. (Note: Bacon will fall off but make sure to keep it.) Working in two batches, heat 1 tablespoon oil in large skillet over Medium-High heat. Stir-fry half the pork and bacon pieces for 7 to 8 minutes until well browned. Set aside on separate plate and repeat with another 1 tablespoon oil and remaining pork and bacon.
Transfer cooked pork to platter. In same skillet melt 2 Tbs. butter and saute onions until tender. Add garlic and saute for 1 minute. Add the chicken broth and simmer until it’s reduced by half. Stir in the cream cheese and mustard. Add pork and accumulated juices back to skillet. Stir in chopped parsley and serve over cooked penne. Salt and pepper to taste.
This meal was so delicious and my kids actually ate it! And asked for seconds! It was a miracle. Wait … did I mention it took less than 30 minutes? Start to finish. Clean-up included! … (Only because I made the kiddos do it ?)
